San Choy Bow

This San Choy Bow recipe contains garlic, onions, and ginger (great immune supporting foods) which the whole family will enjoyed. This recipe is great as a snack or as part of a main meal.

Ingredients

1 Tbsp olive oil

1 tsp sesame oil

2 Tbsp spring onions, chopped

1 clove garlic, crushed

2 cm ginger, grated

4 shitake mushrooms soaked and chopped

1/2 cup carrot, grated

1/4 red capsicum, finely diced

1 red chilli, deseeded and finely chopped

1 Tbsp coriander, finely chopped

750g minced beef, chicken or chopped prawns (optional)

1 Tbsp tamari or soy sauce

1/2 cup lime juice

1 tsp ground sea salt

Iceberg lettuce cups, trimmed


Method

    1. Heat both oils in a large wok or frying pan.

    2. Add ginger, garlic, meat or prawns and stir over high heat until the meat or prawns are just cooked. Set aside and keep warm.

    3. Return the wok to heat and sauté remaining vegetables until just tender. Add the soy sauce lime juice and sea salt to the vegetables together with the meat or prawn mix and mix well.

    4. Spoon the mixture into the lettuce cups and serve.
